Well from my understanding it is in Brazill. If you watch them closley you see them moving the light back and forth real fast. My guess is the fish is seeing the quick flash and may think it is food, like a light bug maybe. So with 1000's of them in the water, they all jump at the light.

The fish are basically scared. They are jumping becaue they figure something big and nasty is trying to eat them.
